Description
The Colombian buñuelo is made of cheese and cassava starch, rolled into a ball and fried until golden brown on the outside and hollow on the inside. It is savory, not sweet, even if its texture might suggest otherwise.
It is the companion to natilla in December, and the rest of the year it goes with breakfast, hot chocolate, or an afternoon coffee. When made correctly, it puffs up on its own in the oil and remains light.
