Santarrosano chorizo comes from Santa Rosa de Cabal, in the Colombian coffee axis. Pork with garlic, paprika, and spices, lightly smoked.
This is a cooking chorizo, not for a charcuterie board. It is grilled or fried until it releases its fat and browns on the outside.
How to prepare:
• On the grill, for about 10 minutes, turning occasionally
• Fried in a pan over medium heat
• Served with arepa, lime, and chili sauce
