Mazamorra blanca is husked white corn, cooked until it pops and becomes tender. In Colombia, it is served with cold milk and grated panela, as a snack or dessert.
It is also used in soups and in "mute santandereano". It is a slow-cooked product: it is soaked, cooked, and stored.
How to prepare it:
• Soak the corn for 8 to 12 hours
• Cook in plenty of water until the kernels open, between 1 and 2 hours
• Serve with cold milk and panela to taste
