El Dorado Red Cargamanto Beans 500 g
Cargamanto rojo beans are Antioquia's staple and have no substitute. Large, speckled beans, with thin skin and a creamy texture when cooked. This is what gives Paisa beans that natural thickness that cannot be achieved with European red kidney beans.
Without them, there's no bandeja paisa or frijoles con garra. They also work well in thick soups, heated, and as a side dish with white rice.
How to prepare them:
• Soak for 8 to 12 hours, changing the water once
• Cook in a pressure cooker for 25 to 30 minutes, or in a regular pot for about 90 minutes
• Add the hogao, grated carrot, and meat at the end
• Do not add salt until the beans are soft, to prevent them from hardening
