Venezuelan guasacaca

Guasacaca venezolana

Guasacaca is the sauce that accompanies everything in Venezuela: grilled meats, arepas, tequeños, empanadas. Green, fresh, and with a touch of acidity that cuts through fat.

Time: 10 minutes · Yields: 6 servings · Difficulty: easy

INGREDIENTS

2 ripe avocados
Half an onion
One sweet pepper
One bunch of cilantro
One small bunch of parsley
2 tablespoons of vinegar
4 tablespoons of oil
One clove of garlic
Salt to taste

PREPARATION

Peel the avocados and remove the pit. Cut the onion and sweet pepper into large pieces, just to make them easier to blend.

Put all the ingredients in the blender: avocado, onion, sweet pepper, cilantro, parsley, garlic, vinegar, oil, and salt.

Blend until you get a thick, intensely green sauce. If you want it more liquid, add a tablespoon of cold water.

Taste and adjust the salt and vinegar to your liking. Everyone has their preference.

Serve cold. It keeps for two days in the refrigerator in a sealed container.

TIP

To prevent it from darkening, store it with the avocado pit inside the container and cover it with plastic wrap pressed directly against the surface.
